2 boxes long grain and wild rice mix
1 1/4 lbs boneless skinless chicken breasts, cut into 1/2 in pieces
1 c chopped onion
1 tsp minced garlic
2 pkg frozen green beans w/ almonds thawed
1 can reduced fat cream of chicken soup
1 c reduced fat sour cream
1 tsp salt
1 tsp ground black pepper
1 tsp dried crushed rosemary
1/2 c shredded Parmesan cheese
Preheat oven to 350 degrees. Spray 2 qt baking dish with nonstick cooking spray. Prepare rice according to package directions. Spray a large skillet with cooking spray heat over medium heat. Add chicken, onion and garlic. Cook 6-8 mins or until chicken is done. Remove from heat, stir in cooked rice,green beans and next 5 ingredients. Spoon mixture into baking dish and sprinkle with cheese. Bake 30-40 mins or until heated through.

Ham Potato Casserole
1 pkg frozen hash browns
3 c cooked cubed ham
1 can cream of chicken soup
1 can cream of celery soup
1 pkg shredded cheddar cheese
In large bowl, combine hash browns, ham, chicken soup, celery soup, 1/3 c water and some salt and pepper. spoon into sprayed 9x13 dish. Bake covered at 350 for 40 mins. Remove from oven, uncover and sprinkle cheese over casserole. Bake another 5 mins.

Bacon Swiss Penne
12 oz uncooked Penne pasta
13 bacon strips
1 1/2 lbs nolness skinless chicken breasts, cut into 1 in cubes
3 tbsp butter
6 green onions chopped
3 tbsp all purpose flour
4 c 2% milk
3 c shredded cheddar cheese
1 1/2 c shredded swiss cheese
1 1/2 c frozen peas, thawed
3/4 tsp pepper
1/2 tsp dried thyme
Topping: 3/4 c dry bread crumbs, 2 tbsp butter, melted
Cook Penne according to directions. Cook bacon in batches over medium heat until crsip. Remove to paper towels, drain, reserve 4 tsp drippings. Crumble bacon and set aside.
Saute chicken in butter and drippings until no longer pink. Add onions; cook 1 min longer. Stir in flour until blended. gradually add milk. Bring to boil; cook and stir 2 mins or until thick. Stir in cheeses, peas, pepper,thyme and bacon. Drain penne; add chicken mixture and toss to coat.Transfer to a 9x13 greased dish. In small bowl, combine bread crumbs and butter. Sprinkle over top. Bake uncovered at 350 for 30-35 mins.

Chicken, Rice, Cheese and Broccoli Casserole
I've been wanting to try to make a recipe like this for a while since the hubby isn't a fan of chicken I thought he might like it at least with the rice. And he did :) He is on a broccoli/cheese kick lately so here's the latest recipe!
1 pkg chicken (3-4 boneless skinless breasts)
3/4 c chicken broth
3/4 c rice
1 pkg frozen broccoli florets
1/4 c lemon juice
1 can cream of chicken soup
1 can cream of broccoli soup (or broccoli cheese)
Salt/Pepper
Mix all ingredients but the chicken and put in a square baking dish. Season chicken with salt and pepper (and anything else you might like). Put on top of rice mixture. Bake for 45 minutes at 375 degrees.
My suggestions - not sure what size baking dish I was using, I think just a standard size one and the rice mixture didn't even coat the bottom of it barely so I might up the quantity of everything slightly next time. I also seasoned my chicken with garlic salt, onion powder, and pepper - I put it on the george foreman for about 4 minutes just to start it cooking although the recipe didn't call for it. Finally, I added some shredded cheddar cheese on top to make it even cheesier! :)

Aunt Audrey's Hashbrown Casserole
I have gotten RAVE reviews on this casserole and everyone always wants me to bring it to the next cookout. Ben's Aunt gave this recipe to me at my bridal shower :)
2 lb bag frozen has browns, thawed
1 pint sour cream (this is 16 ounces but I only use 8 because I'm not a fan of sour cream)
2 cups grated cheddar cheese
1 1/2 cups onion, chopped
2 sticks butter
1 can cream of chicken soup
2 cups crushed Ritz crackers
Melt 1 stick butter, place in 9 x 13 casserole dish with hashbrowns, sour cream, cheese, onion and cream of chicken soup. Mix until through combined. Melt other stick of butter and mix in crushed Ritz crackers until combined. Pour cracker mixture over casserole. Bake at 375 degrees for 45 minutes.
