Best Ever Roast Beef

1 boneless beef chuck roast (4lbs) trimmed
1 lg sweet onion, chopped
1 1/3 c plus 3 tbsp water, divided
1 can condensed French Onion soup
1 c packed brown sugar
1/3 c reduced-sodium soy sauce
1/4 c cider vinegar
6 garlic cloves, minced
1 tsp ground ginger
1/4 tsp pepper
3 tbsp corn starch

Cut roast in half. Transfer to crock pot; add onion and 1 1/3 c water. Combine soup, brown sugar, soy sauce, vinegar, garlic, ginger and pepper in small bowl. Pour over top of roast. Cover and cook on low 7-8 hours or until tender. Remove meat to a serving platter. Skim juices for fat and transfer liquid to a small saucepan. Bring liquid to a boil. Combine cornstarch and remaining water until smooth. Gradually stir into pan until thickened.

Chicken and Corn Chowder


1 can (10 3/4 ounces) cream of potato soup
1 can (10 3/4 ounces) cream of chicken soup
1 cup diced chicken or about 2 cans (4 to 6 ounces each) chunk chicken
1 can (12 to 15 ounces) whole kernel corn, drained
1 cup chicken broth
1/4 cup diced red bell pepper or roasted red bell pepper
1 can chopped mild green chile
1/2 teaspoon salt
1/8 teaspoon black pepper
1/4 teaspoon dried leaf thyme
1 cup milk
Preparation:
Combine the soups, chicken, corn, chicken broth, bell pepper and chile, salt, pepper, and thyme in a 4- to 6-quart crockpot. Cover and cook on LOW for 4 to 5 hours. Add milk and cook for about 30 minutes longer, or until hot.

Black Eyed Peas and Ham

  • 1 pound frozen black eyed peas
  • 1 cup chicken broth
  • 2 ribs celery, thinly sliced
  • 4 cloves garlic, minced
  • 1 bunch (6 to 8) green onions, thinly sliced
  • 6 ounces diced ham
  • 1/8 teaspoon coarsely ground black pepper
  • 1/2 teaspoon Creole seasoning

Preparation:

Combine all ingredients in slow cooker. Cover and cook on LOW for 6 to 8 hours. Serves 6.

Creamy Ham and Broccoli

  • 1/2 cup. chopped onion
  • 3 cups chopped ham, or use cooked chopped chicken or turkey
  • 16 oz. frozen cut broccoli, thawed
  • 1 can condensed cream of mushroom soup
  • 1 jar (8 oz.) pasteurized process cheese spread
  • 1 can (8 oz.) sliced water chestnuts, drained
  • 1 cup. uncooked converted rice
  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup. chopped celery
  • 1/2 tsp. pepper
  • paprika (optional)

Preparation:

In slow cooker, combine ham, broccoli, soup, cheese spread, water chestnuts, rice, milk, celery, onion and pepper. Stir until blended. Smooth top, pushing rice into mixture. Cover and cook on high for 2 - 2 1/2 hours or on low for 4-5 hours or until rice and onion are tender, stirring occasionally if possible. Check near end of cooking time to make sure the rice does not get too mushy.

Ham and Potato Casserole

  • 6 to 8 slices ham, deli or from leftover ham, about 1/8-inch thick
  • 8 to 10 medium potatoes, peeled and thinly sliced
  • 1 med. onion, peeled and thinly sliced
  • salt and pepper
  • 1 1/2 cups grated Cheddar cheese
  • 2 cans condensed cream of celery or cream of mushroom soup
  • paprika

Preparation:

Put half of ham, potatoes and onions in Crock Pot. Sprinkle with salt and pepper, then 1 cup of the grated cheese. Add remaining ham, potatoes and onions, and spoon undiluted soup over th top. Sprinkle with remaining 1/2 cup cheese and paprika. Cover and cook on low for 8 hours or on high 4 hours.

Kielbasa with Cabbage

  • 1/2 head of cabbage, coarsely sliced
  • 1 medium potato, diced
  • 1 teaspoon salt
  • 1/2 teaspoons caraway seeds, if desired
  • 1 large onion, halved and thinly sliced
  • 1 1/2 to 2 pounds Polish sausage, cut into 1" pieces
  • 1 can (14oz) chicken broth (1 1/2 cups)

Preparation:

Combine all ingredients in slow cooker/Crock Pot, mixing well. Cover and cook on low for 8 to 10 hours, or high for 3 to 4 hours.
Serves 4 to 6.

Parmesan Potato Wedges

2 lbs red potatoes cut into wedges
1/4 c finely copped yellow onions
1 1/2 tsp dried oregano
1/2 tsp salt
black pepper to taste
2 tbsp butter cut into 1/8 in pieces
1/4 c grated parmesan cheese

Layer potatoes, onion, oregano, salt paper and butter in crock pot. Cover and cook on high 4 hrs. Transfer to serving platter and sprinkle with cheese.

Best Ever Roast

1 beef chuck shoulder roast
1 can condensed cream of mushroom soup, undiluted
1 envelope dry onion soup mix
4-5 med potatoes, quartered
4 c baby carrots

Place roast in crockpot. Combine mushroom soup and onion soup mix in medium bowl. Pour over roast. Cover and cook on Low 4 hours.Add potatoes and carrots. Cover, cook on low 2 hours.

Mac and Cheese Crockpot

6 c elbow macaroni
2 tbsp butter
4 c evaporated milk
6 cups shredded cheddar cheese
2 tsp salt
1/4 tsp black pepper

In large bowl toss macaroni with butter. Stir in evaporated milk, cheese, salt and pepper; place in crockpot. Cover and cook on high 2-3 hours.

Chili con Queso

1 pkg pasteurized processed cheese spreed, cubed
1 can (10 oz) diced tomatoes with green chilies
1 c sliced green onions
2 tsp ground coriander
2 tsps ground cumin
3/4 tsp hot pepper sauce
Jalapeno slices (opt)
Tortilla chips

Combine everything in crockpot slow crocker, stir until well blender. Cover, cook low 2-3 hours or until. Add jalapenos slices if desired. Serve tortilla chips.

Pizza Fondue

1/2 lb bulk Italian sausage
1 c chopped onion
2 jars meatless pasta sauce
4 oz thinly sliced ham, chopped
1 pkg (3 oz) sliced pepperoni, chopped
1/4 tsp red pepper flakes
1 lb mozzarella cheese, cut into 3/4 in cubes
1 loaf Italian or French bread, cubed

Cook sause and onion in large skillet over medium-high heat until sausage is brown. Drain fat. Transfer mixture to crockpot. Stir in pasta sauce, ham, pepperoni and pepper flakes. Cover, cook on low 3-4 hours. Serve with cheese and bread cubes.

Three Beans and Sausage

1 1/2 lbs smoked sausage cut into pieces
1 can kidney beans, rinsed and drained
1 can great northern beans, rinsed and drained
1 can black beans, rinsed and drained
1 c chopped onion
1 c water
1 can tomato sauce
2/3 c chopped celery
1 tsp chicken bouillon granules
1 tsp minced garlic
1 bay leaf
1/2 tsp pepper
1/4 tsp dried oregano
1/4 tsp dried thyme
Hot cooked rice

In slow cooker, combine first 12 ingredients. Sprinkle with oregano and thyme if desired. Cover and cook on low 4 to 4 1/2 hours. Discard bay leaf. Serve with rice.

Ham and Potatoes au Gratin

2 pkgs dry au gratin potato mix
2 c diced cooked ham
1/4 c bottled roasted red sweet pepper, drained and chopped
3 c water
1 can condensed cheddar cheese soup

Lightly coat slow cooker with cooking spray. Place au gratin potato mix with contents of seasoning packets, ham and roasted red pepper in cooker. In large bowl, stir water and soup. Pour over potato mixture. Cover. Cook low 7-8 hours.

Chicken and Dumplings

1 lb boneless skinless chicken breasts, cut in to cubes
1 lb frozen vegetables of choice
1 med onion chopped
2 jars (12 oz) chicken broth
1 1/2 cups low fat buttermilk biscuit mix

Combine chicken, vegetables, onion, and chicken broth (reserve 1/2 c plus 1 tbsp of broth) in slow cooker. Cover. Cook on high 2 hours. Mix biscuit mix with reserved broth until moistened. Drop by tablespoonfuls over hot chicken and vegetables. Cover. Cook on high 10 mins. Uncover and cook on high 20 mins longer.

Wild Rice Chicken Soup

2 tbsp butter
1/2 cup dry wild rice
6 cups chicken broth
1/2 c minced onion
1/2 c minced celery
2 c cooked and chopped chicken
1/2 c browned slivered almonds

Melt butter in small skillet. Add rice and saute 10 mins over low heat. Transfer to slow cooker. Add all remaining ingredients except chicken and almonds. Cover. Cook on low 4-6 hours. One hour before serving stir in chicken. Top with almonds if desired.

Crockpot Beef Stew

I've gotten great reviews of this dish (other then from hubby!) and it's so easy because it's in the crockpot! I go heavy on the celery and potatoes because hubby is not a fan of carrots but you can even it out a little more if you would like.

1 pkg beef stew meat
1/4 cup flour
1 tbsp paprika
Salt, Pepper
5 potatoes, cleaned and cubed
3 stalks celery, cleaned and chopped
2 carrots, peeled and chopped
3 cups beef broth (about 2 cans)

Put stew meat in bottom of crockpot. Mix flour, paprika, salt and pepper, pour over stew meat. Mix with your hands until meat is covered. Put vegetables in the crockpot. Cover with beef broth and stir to mix. Cook 8 hrs on low, stirring occasionally.
